Mac & Cheese Recipe with Yellow Cheese?

For the white sauce you want equal parts of er and flour, the basic recipe is 2 tbsp. er with 2 tbsp. flour and 1 1/4 cups milk. You'll probably want to double that. Melt the er, add the flour, stir for a minute or two, then whisk in your milk. Season with salt and pepper, 1tsp salt, 1/2 tsp pepper (you can use white pepper if you choose). Remove it from the heat and blend in your cubed cheese (this is uming you are using velveta or other processed cheese food product). If it's actually cheese, like cheddar or american, you can shred, it will melt quicker. The flavor will be heavy and gloppy if you use all velveta, not very pleasant. You may want to add a teaspoon of prepared mustard or dry mustard and some hot sauce to sharpen up the flavor. Add cooked macaroni, stir and serve.
